Winemaking: This individual vineyard Sangiovese was made from the original planting of Sangiovese grown on Mayfield, and was hand picked at optimum ripeness to capture the best fruit possible. The grapes were crushed and chilled to small open fermenters where they were cold soaked for two days prior to fermentation. During fermentation the wine was hand-plunged twice daily to enhance the extraction of soft flavours, colour, and tannins from the skins.

Bouquet: An aroma of dark cherries, spice & violets

Palate: There is a rich soft texture to the mouth feel with delicate ripe fruit, spice and white pepper, complimented well with soft sweet chalky tannins and natural acid to balance. 

Cellaring: Drink now or cellar for up to five years

Food Suggestions: Anything Mediterranean for lunch.
